Carrageenan derives from the refining of red seaweed species belonging to Rhodophyceae family. They are also known as Irish seaweed. They are produced in two grades: full refined and semi-refined. In a fully refined process, the algae is dissolved from the cellulose matrix and obtained as a clean and clear end product. Fully refined is preferred in applications where transparency and clarity are required.
In the semi-refined process; to increase the gel strength of the carrageenan, some cellulose is retained. The semi-refined product has excellent gel formation and binder properties at a much lower cost. However, the gel formed is not visually transparent compared to the refined one.
