Here are some common ways in which the fresh crabs can be prepared:
Cooking:
Steaming: Fill about 4 inches or 66 ml of water on a large pot and bring to a boil. Gently place a steaming rack over the water and ensure that the rack does not touch the water's surface. Place small portions of the fresh crab or the whole crab onto the steaming rack and close the lid over the pot to allow the crab to steam slowly. To ensure even cooking, place the legs knuckle-side down, where the heat content is higher. Allow to steam for 7 to 10 minutes, or until the internal temperature reaches 110 to 140°F or 43 °C to 60°C. To further enhance the flavour of the garden fresh crawfish, several slices of ginger or even spices such as cardamom may be added to the boiling water.
Stir-frying: To take on a more Asian take on the fresh crabs, stir-frying would be the most ideal method as it is also one of the most versatile forms of cooking both meat and vegetable-based ingredients. A simple stir-fry made with soy sauce, some vinegar, and chili oil is all it takes to elevate this proud marine shellfish to the next level of fine dining.
Storage: To ensure the optimal taste and texture of the fresh crab meat, please carefully store the crabs in a secure ice-box, and place them inside the freezer compartment until cooking time. Remain vigilant to keep the fresh crabs under constant refrigeration at 3.33°C or 38°F to reduce the chance of spoiling.

Please refrain from making the common mistake of leaving the crab meat at room temperature to thaw. This will not only run the risk of bacteria growth but could also result in the crab meat developing a rubbery, gamey texture as opposed to its flaky, soft texture.
